Tomato & Orange Soup

Two flavours which would not usually be served together, combine to make a summery soup that can be served hot or cold. Great for a bit of winter sunshine, or as a cooling treat in the summer.

Recipe: Tomato & Orange Soup Related Stocks: mediterranean
  • 500ml Mediterranean stock
  • 1 Orange zest and juice
  • 3 Teaspoons sunflower oil
  • 1 small onion – chopped
  • 1 garlic clove- crushed
  • 750 grams ripe tomatoes
  • 1 teaspoon sugar
  • 60ml (2floz) double cream (optional)
  1. Heat oil in a large pan
  2. Add onion and garlic and sauté over low heat for 5 minutes
  3. Add tomato and grated Orange peel, simmer on a low heat for 5 minutes
  4. Add stock and sugar and orange juice, cover and simmer for 15 minutes
  5. Blend to desired consistency and press through a sieve
  6. Return to the stove until warm
  7. Serve
