Spicy Carrot Soup

A delicious supper for a cold winter's evening, Spicy Carrot soup is a quick, easy and tasty addition to any home recipe folder.

Recipe: Spicy Carrot Soup Related Stocks: spicy
  • 900ml Spicy stock
  • 15ml/ 1 tablespoon sunflower oil
  • 1 large onion
  • 675 grams carrots
  • 1 teaspoon
  • ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon chilli powder (hot or mild
  • depending on personal preference)
  • Salt & pepper to taste
  • Fresh coriander to garnish
  1. Heat oil in a large pan
  2. Add onion sauté gently for 5 mins
  3. Add carrots sauté for further 5 minutes
  4. Add coriander, cumin and chilli powder
  5. Stir in the stock, bring to the boil and simmer for 30 minutes until the carrots are tender
  6. Blend to desired consistency
  7. Return to the pan and warm
  8. Serve in warmed soup bowls
