Warming Root Vegetable Soup

A definite winning winter recipe combining a blend of root vegetables with a little bit of spice to get you through the cold months.

Recipe: Warming Root Vegetable Soup Related Stocks: spicy
  • 2 x 500ml / 1.5 litre stock Spicy
  • 3 medium carrots
  • 1 large potato
  • 1 large parsnip
  • 1 large turnip
  • 1 onion
  • 30 ml 2 tbsp sunflower oil
  • 25 g/ 1oz 2 tbsp. butter
  • Ginger (3inch cubed)
  • Coriander. Salt / pepper
  • 1 tbsp lemon juice
  1. Place onion in oil, sauté for 5 mins
  2. Place all veg in pan cover / sauté 15 min, stirring occasionally
  3. Add stock simmer until vegetables are soft.
  4. Blend to desired consistency.
  5. Return to heat, 5 mins
