Roasted Onion Soup

Usually served as a started, this gorgeous deep soup uses cheese and Marmite to make it extra special.

Recipe: Roasted Onion Soup Related Stocks: rustic
  • 2 x 500ml / 1.5 litres Rustic stock
  • 100g strong cheddar cheese
  • 175 ml dry white wine
  • 40g unsalted butter
  • 4 medium onions
  • Sea salt & black pepper
  • 1 tablespoon demerara sugar
  • 1 teaspoon marmite
  1. Peel and quarter onions
  2. Season with salt and pepper and roast onions in a roasting tin for 30 /40 minutes until darken
  3. Remove from oven, cool and slice
  4. Place in a large saucepan, add sugar and wine and bring to the boil until wine has evaporated, add warmed stock and marmite return to the boil, then simmer for a further 20 minutes.
  5. Place in warmed soup bowls, scatter with grated cheese, place under grill for 5 minutes until cheese has melted and browned
