Mediterranean Vegetable Paella

A fantastic colourful and tasty dish that can be eaten as an accompaniment or a main meal, Mediterranean Vegetable Paella is an easy way to get most of your 5 a day in one pan!

Recipe: Mediterranean Vegetable Paella Related Stocks: mediterranean
  • 1 litre (2 x 500ml) boiling Mediterranean Stock
  • 1lb (445g) Italian rice
  • 4 tablespoons of olive oil
  • 1 large onion
  • finely chopped
  • 2 garlic cloves
  • 2 large ripe tomatoes peeled & chopped
  • 8oz green beans trimmed
  • 2 carrots – peeled & cut length ways into ¼ inch sticks
  • 3oz (85g) fresh or frozen peas
  • 2 peppers
  • red or green
  • seeded and cut into ¼ inch strips
  • 3 tablespoons chopped fresh parsley
  • Large pinch saffron
  1. Heat oil in a large low sided cast iron (oven proof) pan
  2. Add onion & garlic, sauté over medium heat for 5 minutes until onions begin to soften
  3. Add tomatoes, beans & carrots, cook uncovered for 3 minutes
  4. Add two tablespoons of water cover & simmer over low heat for 10 minutes until vegetables begin to soften
  5. Add fresh peas, peppers and parsley
  6. Cover & cook for 2 minutes
  7. Uncover add rice, frozen peas, saffron and hot stock
  8. Simmer for 5 – 10 minutes on a low heat until the rice is cooked and liquid is almost absorbed
  9. Place uncovered in the oven for 10 – 15 minutes, allowing time for rice to cook and liquid to absorb
  10. Remove from oven, allow to stand for 10 minutes before serving
