Parsnips are a valuable source of iron, potassium and calcium, containing vitamins A, B and C. As a root vegetable parsnips are related to carrots, swedes, turnips most commonly associated with winter evenings and hearty dishes of broth and stews. The sweet earthy taste of parsnips adds to the depth of flavour found in our stocks.
We use only young parsnips which require little preparation, beyond simply scrubbing trimming and cubing.
