Low in Saturated Fat, and very low in Cholesterol Celery is also a good source of Riboflavin, Vitamin B6, Vitamin A,Vitamin C, Vitamin K, Pantothenic Acid, Calcium, Magnesium, Phosphorus Dietary Fibre, Folate, Potassium and Manganese.
The two most common types are white and green, the difference being the way they are grown. Grown naturally celery stalks are green, however to protect the stalks from sunlight banks of earth are placed around the bases, resulting in pale, white stalks.
White celery with its slight covering of soil, available during the winter months is considered to have a better flavour than the green variety and as much as possible is our preferred variety for use in our stocks.
